Manual harvest and sorting, low-temperature fermentation followed by 15 months of aging in tanks.

• To enjoy in its youth: (within 3 years) to appreciate its freshness and superb balance between richness and acidity.
• To enjoy at its peak: (3-5 years) to benefit from new notes of green almond, sweet spices, and its remarkable fullness.
